Days 3 & 4: Prep Food for the Work Week

 Another couple of days to report on my food.  I had to post a picture of guacamole because it is my all-time favorite snack.  To be honest, I probably eat 1 avocado every single day.  I could do an entire post on healthy fat, but it is important to dispel the myth that eating fat makes you fat.  NOT TRUE!  Anyway…you want to know what I’ve been eating.

Sunday:

Breakfast: black coffee (organic, shade grown), 3/4 pint of blueberries, 1 nut/fruit ball, 2 egg scramble w/ an entire onion, 3 handfuls fresh spinach, and 2 slices of bacon

Snack: finished the remaining 1/4 pint of blueberries, 1 slice of bacon from breakfast

Lunch: guacamole w/ 3/4 of a red bell pepper as my “chip”, handful mixed nuts (it was a small lunch because I was over at a friend’s house learning about the beer that he is brewing and perfecting that will soon be on tap at Chubby Trout and Fat Tomato.  Be on the look out!)

Dinner: gumbo- shrimp, crawfish, sausage, green pepper, onions, garlic, celery, tomatoes (I used the recipe from www.paleocomfortfoods.com)

Back to the work week!  Sunday, I also prep fruit and veggies for the work week.  That way things are easy to grab; this makes healthy eating so much easier!

Monday:

Breakfast: 2 nut protein balls (almonds, walnuts, coconut, dried dates), banana, black coffee (I often just throw whatever I have on hand together for the protein balls but you can find a recipe for them in Mark Sisson’s Primal Blueprint Quick and Easy Meals.  Make them on Sunday, and they are easy to grab throughout the week.)

Snack: 4 small coconut flour pancakes that were leftover from a weekend breakfast

Lunch: leftover gumbo and 2 squares of 85% dark chocolate (Remember me telling you guys that I eat leftovers for lunch everyday?!  It’s true!)

Snack: One large carrot

Dinner: Spaghetti over a bed of spinach and a few strawberries for dessert- spaghetti squash as noodles, homemade sauce with tomato paste, chunky tomatoes, balsamic vinegar, sea salt, italian seasoning, chicken sausage

It was my first time making spaghetti squash.  Since transitioning to a Paleo eating style, I have not missed pasta at all.  Therefore, it has been a good 2 years since I have eaten spaghetti.  I have to admit that it was a pretty good substitute for the real thing.  It was definitely worth a repeat.

    yeah, I doubt it but I thought I would take a chance.

      Ha! Nice try. Corn is a non-glutenous grain and therefore healthier than wheat products. Making sure corn consumed is non- GMO is important. Still should not be a staple. 🙂 However, after you have made a full transition, it could be an occasional indulgence. Thanks for the post!

    Does your husband eat paleo style as well? I ordered some paleo cook books over the weekend,,,,can’t wait to get them. I am loving the website everyday paleo.

      He definitely eats Paleo. However, I believe going out to lunch with customers is often where he eats non-Paleo. I don’t ask; he is a big boy. I have done my best to educate him, and from there the only influence I have is when he eats with me. 😉
