Much Awaited Scone Recipe

2 1/2 cups blanched almond flour
1/2 tsp salt
1/2 tsp baking soda
1/3 cup oil (coconut, grapeseed, or butter)
1/4 cup honey or agave
2 large eggs
1 cup dark chocolate chips…or blueberries…or coconut/pineapple…be creative!

Preheat oven to 350 degrees. Put parchment paper down on 2 baking sheets.
In a large bowl, combine almond flour, salt, and baking soda. In a medium bowl, whisk together the oil, honey, and eggs. Stir the wet ingredients into the almond flour mixture until thoroughly combined, then fold in the chocolate (or whatever you chose). Drop batter 2 inches apart onto the baking sheets. Bake for 12 to 17 minutes until golden brown or a toothpick inserted into the center comes out clean. Let the scones cool for 30 minutes on the baking sheets, then serve.
