Nutrition Class: Another Great Ending!

So, last night was the last class for the April Nutrition Seminar.  We had a great audience, once again, and I am looking forward to going over your food logs!  Expect an email!  So, I’m posting the last of my food log….


Breakfast: 2 paleo pumpkin muffins, banana, coffee

Snack: homemade granola

Lunch: Leftovers!  Mushrooms/onions over mashed cauliflower

Snack: homemade granola, jicama w/salsa

Dinner: 1 chicken sausage w/ 1/2 head of cauliflower, fresh juiced broccoli, asparagus, apple, 2 squares dark chocolate

Snack: paleo pumpkin muffins


Breakfast: paleo pumpkin muffin, granola w/frozen blueberries and coconut milk on top (pictured above), coffee

Post workout: Tuna salad on jicama

Dinner: spaghetti squash noodles w/chicken sausage, homemade tomato sauce


Breakfast: paleo pumpkin muffin, banana, coffee

Snack: strawberries

Lunch: Leftover spaghetti, orange/apricot scone (Michelle brought paleo snacks to staff mtg)

Dinner: Tacos w/avocado, 2 squares dark chocolate


Breakfast: banana, coffee

Snack: strawberries, hard boiled egg

Lunch: Leftovers!  Tacos w/avocado, 2 squares dark chocolate

Dinner: hard boiled egg, an orange, an apple, an orange/apricot scone

I hope some of you nutrition folks are seeing my glaring slip ups since we talked about them last night.  I will say that  I do not have my supplements listed, so there is a better Omega 6:Omega 3 ratio than at first glance.  😉

The next class will be July 12th and 19th!  Mark your calendars!

    What did you use for the taco shell…..? Lettuce? Or was it just on your plate like a salad? Also, more info on how you make your granola stuff.. 🙂

      I just eat tacos in a bowl. 😉 Although you could easily use a lettuce wrap! I’ll post the recipe for granola since I’ve had a few requests. I think Robin also has a recipe she uses. Maybe we can get her to share hers, too!
