Salad Dressing: Vinaigrette, Caesar, and Avocado Mint

I have had several patients lately ask me about salad dressing.  When they begin to eat more vegetables, salad is usually a way to make that happen.  However, who wants to ruin their attempt at healthy a more healthy set of foods by smothering it in sugar and hydrogenated fat?!  So, I am posting a few recipes for salad dressing.  If you make a big batch, you can use it throughout the week!


1/4 cup vinegar (red wine, balsamic, etc.)

1 Tbsp chopped shallot (sub garlic if you want)

1 tsp mustard

1/2 tsp salt

1/4 tsp black pepper

1/2-3/4 cup olive oil

Directions: Whisk together everything but the oil.  Then slowly add the oil and continue to whisk until blended. Keep in the fridge for several weeks if kept in an airtight container!


2 tsp red wine vinegar

3 Tbsp lemon juice

1 Tbsp anchovy paste

1-2 finely chopped garlic

2/3 cup olive oil

salt and pepper to taste

2 raw egg yolks (optional)….side note: only if they are cage free, organic eggs!

Directions: Whisk together vinegar, lemon juice, anchovies, garlic, and eggs.  Slowly drizzle in olive oil while continuing to whisk until well incorporated.  Add salt and pepper.

For all you folks that have mint growing out of control and more hot peppers than you know what to do with!

Avocado Mint:

2Tbsp rice wine vinegar

1 Tbsp lime juice

1/2 cup olive oil

15-20 mint leaves

1/4-1/2 of a jalapeno, minced

Puree all ingredients together and add salt to taste.

There you have it.  A few salad dressing options, and there are tons of options out there if you just look a little.  Homemade dressings are free from sugar and chemical preservatives which makes them not only healthier, but they honestly taste that much better!
