School Starts in No Time! What Will You Pack in Those Lunches?!

paleo lunch ideas

I feel like it was just yesterday that I was telling all my teacher friends just how jealous I was that they had the entire summer off!  However, it seems that summer has flown by and they are all getting ready to go back to school.  Hopefully they took the break to relax, refocus, and get re-energized for the upcoming year.  Teachers are probably some of the most selfless people there are, and I know that the school year can be emotionally draining with all they put into it.  We appreciate them. 😉

So….what to do about school lunches when you need healthy options.  I am writing this post for kids, but adults could be just as happy packing these tasty treats.  Let’s be honest; who doesn’t want kid food sometimes?!

Top 10 Ideas

1. Sunflower seed butter (tastes more like Peanut butter than almond butter) and sugar free jelly on paleo pancakes

Make pancakes one morning on the weekend and put the rest in the fridge for the week!  Use them for pb&j or paleo mcgriddles!  No need for refrigeration when you pack for lunch!

2.  Homemade granola

3. Fresh fruit and veggies

You can pair them up with nut butter if you’d like.  Apples with almond butter or celery with sunbutter, etc. Whole foods has individual size almond butter pouches if you want that convenience.

4. Lunch meat roll ups (veggies rolled up into lunch meat!)

Tip: let your kids choose what goes in them.  Ownership in their creation will yield a higher level of compliance….just sayin’.

5. Guacamole and plantain chips

You could easily make homemade guacamole or you could buy individual packs of guac by Wholy Guacamole when you pick up your plantain chips at Martin’s.

6. Hard boiled eggs

7. Paleo cookies or larabars (homemade larabars are easy and if you attended the cooking class, you got a crash course!)

Kids like to feel like they get treats in their lunch just like the other kids!  Theirs just won’t be full of chemicals. 😉

8. Homemade soup in a Thermos

9. Veggie slaw made with EVOO instead of mayo (so you don’t need to keep it cool)

You can use any veggies you have on hand.  Red cabbage with apple and green onion is an awesome option.

Make life easy on yourself and pack leftovers.  They take zero time to make in the morning, they are full of good ingredients, and you won’t end up throwing them away.

ok…10 was a cop out….applesauce or pearsauce?!
