CSA Week 15: Stir Fry w/Red Choy

CSA Week 15 bounty:

30 tomatoes (make salsa, tomato soup, or freeze them)

15 okra (make fried okra)

green beans

2 turnips

2 beets

1 leek

bok choy

2 bell peppers

3 ears corn

salad mix

I bunch kale

1 watermelon

parsley and basil (which I traded for more turnips)

Stir Fry

1 lb meat (steak, chicken, shrimp, etc.)

1 bell pepper, sliced

1 leek (or green onions), chopped

1 head bok choy, chopped

1 clove garlic

1 tsp ginger

1 tsp fish sauce

fresh cilantro

1 1/2 tsp sesame oil

Directions:

Heat sesame oil in the wok until sizzles when water touches.  Place meat in the wok and stir fry until desired doneness.  Remove from wok and add bell pepper, leek, garlic, ginger, fish sauce and stir fry until bell pepper begins to soften.  Then add the bok choy until wilted.  Add the meat back in to warm through.  Serve and garnish with cilantro!
