CSA Week 18: Paleo Tacos!

In case you haven’t noticed, we are transitioning software in the office!  So, thank you in advance for your patience!  I have to admit that I make tacos every single week.  I always tell nutrition patients that the goal in finding food they love is finding their family go-tos.  Everyone has their own rotation of foods and usually that means there’s one that it is easy, quick, and always tastes delicious.  For me, that’s my friend “the taco.”

Paleo Tacos

Ingredients:

1 lb ground beef

1 bell pepper, chopped

1 onion, chopped

2 garlic cloves, minced

1/4 cup cilantro, chopped

Taco seasoning: (from Mark’s Daily Apple)

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon onion powder
  • 1/4 teasoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper

Directions:

Brown the beef in a pan.  If you are using grassfed beef, there shouldn’t be much fat in the pan.  Otherwise, you may want to drain off the excess before adding the spices.  Add the spices to the meat along with the chopped up veggies and cilantro. When your onions are translucent, it’s done!  Top with a big ole heaping of avocado.

I often double this and eat as leftovers for lunch because it is very forgiving when reheated over and over. 😉
